Maple-Ginger Vinaigrette


1 medium clove garlic

1 medium shallot

1 inch piece ginger root, peeled and coarsely chopped

2 tablespoons dijon mustard

2 tablespoons soy sauce

2 tablespoons maple syrup

3 tablespoons balsamic vinegar

1/2 cup olive oil

1/2 cup canol oil

coarse kosher salt and fresh ground black pepper, to taste

In a blender or food processor, throw in garlic, shallot, ginger, mustard, soy sauce, syrup, and vinegar. Combine until well blended (becoming smooth).

With motor running on low, slowly pour in the oils through the hole in the blender or the feed tube of the processor and blend until emusified. Taste for S & P and adjust accordingly.

Makes 1 1/2 cups.
