Our faithful farmstand shopper, Kathy Mackenzie, shared this recipe with us. It has been a crowd pleaser for her family and comes from an old cookbook she owns, Cooking Down East. "a winner"
2 tablespoons butter
1 tablespoon chopped onion
3 cups mashed yellow turnips/rutabaga
1 teaspoon salt
1 tablespoon sugar
dash black pepper
2 egg yolks
2 egg whites
Melt butter and cook the onion until a delicate brown. Add turnips and seasonings. Add the beaten egg yolks. Fold in the stiffly beaten egg whites. Turn into a greased baking dish. Bake uncovered at 375 degrees for about 1 hour. Serves 6
