Instructions:
Separate and wash lettuce leaves, pat dry.
Chop bok choy and sugar snap peas into bite-sized pieces.
Thinly slice radishes and scallions.
Mince garlic scapes.
In a small bowl, mix soy sauce, rice vinegar, sesame oil, and grated fresh ginger to create the dressing.
In a large bowl, combine bok choi, radishes, sugar snap peas, scallions, and garlic scapes.
Pour the dressing over the vegetable mixture and toss to coat.
