Ingredients:
1 lb butternut squash (or any winter squash) peeled, seeded and cut into cubes
1 tbs olive oil
1/2 teaspoon salt
Freshly ground pepper
1 lb Brussel sprouts (trimmed and quartered)
2 strips of bacon
2 tbs pure maple syrup
2 tbs soy sauce
Instructions:
Preheat oven to 450 degrees F. Spray sheet with cooking spray.
Combine the squash, brussel sprouts, olive oil, salt, and pepper in large mixing bowl.
Spread the vegtables in an even layer on 1 sheet pan. Top with bacon. Roast for 20 minutes.
With spatula toss vegetables .and roast for another 15 minutes.
In small sauce pot, combine the maple syrup and soy sauce. Cook over low-medium heat for 5 minutes, or until begins to thicken. Put to the side.
When vegtables are done roasting, transfer to serving dish. Add maple soy sauce, toss, and enjoy!
