Maple Soy Roasted Brussel Sprouts, Butternut Squash and Bacon







Ingredients:

  • 1 lb butternut squash (or any winter squash) peeled, seeded and cut into cubes

  • 1 tbs olive oil

  • 1/2 teaspoon salt

  • Freshly ground pepper

  • 1 lb Brussel sprouts (trimmed and quartered)

  • 2 strips of bacon

  • 2 tbs pure maple syrup

  • 2 tbs soy sauce


Instructions:

  • Preheat oven to 450 degrees F. Spray sheet with cooking spray.

  • Combine the squash, brussel sprouts, olive oil, salt, and pepper in large mixing bowl.

  • Spread the vegtables in an even layer on 1 sheet pan. Top with bacon. Roast for 20 minutes.

  • With spatula toss vegetables .and roast for another 15 minutes.

  • In small sauce pot, combine the maple syrup and soy sauce. Cook over low-medium heat for 5 minutes, or until begins to thicken. Put to the side.

  • When vegtables are done roasting, transfer to serving dish. Add maple soy sauce, toss, and enjoy!
