Ingredients:
2 tablespoons olive oil, divided
1 head of radicchio, coarsely chopped
2 or 3 cloves of garlic, minced
1/4 cup white wine
1 teaspoon Balsamic vinegar
1 tablespoon grated Parmesan cheese
Instructions:
Hear 1 tablespoon olive oil in a large skillet on medium heat. Add the garlic, cook for about 30 seconds until garlic is fragrant.
Add the radicchio to the skillet along with the remaining olive oil. Stir to combine with the garlic. Cook for about 2 minutes, then stir in white wine.
Cover the skillet and lower the heat to medium low. Cook for about 10 minutes, until radicchio has softened.
Finish the dish by uncovering the skillet and turning the heat off. Stir in the balsamic vinegar, and top with the Parmesan cheese. Add salt and pepper to taste.
