Sautéed Radicchio with Balsamic and Parmesan Cheese




Ingredients:

  • 2 tablespoons olive oil, divided

  • 1 head of radicchio, coarsely chopped

  • 2 or 3 cloves of garlic, minced

  • 1/4 cup white wine

  • 1 teaspoon Balsamic vinegar

  • 1 tablespoon grated Parmesan cheese

Instructions:

  • Hear 1 tablespoon olive oil in a large skillet on medium heat. Add the garlic, cook for about 30 seconds until garlic is fragrant.

  • Add the radicchio to the skillet along with the remaining olive oil. Stir to combine with the garlic. Cook for about 2 minutes, then stir in white wine.

  • Cover the skillet and lower the heat to medium low. Cook for about 10 minutes, until radicchio has softened.

  • Finish the dish by uncovering the skillet and turning the heat off. Stir in the balsamic vinegar, and top with the Parmesan cheese. Add salt and pepper to taste.

  • Serve and enjoy!
