Ingredients:
2 tablespoons butter
1 pound mushrooms sliced
3 shallots peeled and quartered lengthwise
2 tablespoons dijon mustard
2 teaspoons white wine vinegar
1 head of frisée torn
salt and pepper to taste
Instructions:
Cook the mushrooms. Melt butter in a skillet over medium heat. Add mushrooms and cook until well-browned, season with salt and pepper. Remove mushrooms off of heat and place to the side.
Add the shallots to the skillet and cook got 3-4 minutes. Add mushrooms back in and cook for 1-2 minutes.
Prepare the sauce. Whisk together the maple syrup, dijon mustard, and white wine vinegar in a bowl.
Turn the heat on the mushrooms to high. Pour in the sauce and bring to a boil. Reduce heat to low and add in the torn frisee. Cook for 5 minutes until wilted- season to taste with salt and pepper.
Turn off heat.
Serving recommendation: serve with cook riced/ noodles or alongside your favorite meat.
